Thai Tea
Thai tea is generally made with a strong 'orange' Srilankan tea (the
last tin we bought was "Police Dog Brand" (sic). No additional
spices are added.
Put 2 tablespoons of tea in a muslin bag and suspend it over a jug. Pour
in one and half cups of boiling water and let steep for a few minutes.
Transfer the bag to a second jug and pour the water from the first jug
into the bag and steep.
Repeat this, transferring from jug to jug until the tea is strong
enough.
Squeeze the bag firmly to extract as much tea as possible, then add
either a quarter cup of sweetened condensed milk, or a quarter cup of
unsweetened condensed milk and 4 tablespoons of suger.
Stir to dissolve the sugar, chill in the refrigerator, and serve over
shaved ice.
Makes 2 cups.
